Mandarin Orange Bread Pudding

Ingredients

    * 4 cups French bread, cut or torn into 1/2-inch pieces
    * 1 cup ricotta cheese
    * 3 eggs
    * 1/2 cup  heavy cream
    * 1 cup milk
    * 1/4 cup  orange juice
    * 2 teaspoons vanilla
    * 1 (3 oz.) pkg.  orange Jello
    * 1/2 teaspoon  salt
    * 1 teaspoon  cinnamon
    * 1/2 cup  sugar
    * 2 cups  mandarin oranges
    * 1 (12 oz.) jar  orange marmalade

Instructions

Preheat oven to 350 ° F. Spray 11-inch Kaiser Bakeware La Forme Springform Pan with 1 Base evenly with cooking spray.

Lightly toast bread cubes, for 5 minutes. In a large bowl, mix ricotta cheese and eggs together thoroughly. Stir in remaining ingredients, except for marmalade. Let stand for 10 minutes.

Pour mixture into springform pan. Bake 60 minutes.

Remove from oven, gently spread marmalade over top of bread pudding. Return to oven for another 10 minutes.

Cool for 30 minutes before serving.
