Chocolate Mint Cake
Ingredients
Cake
* 4 oz layered chocolate and mint candies or mint flavored chocolate chips
* 3 1/2 oz bittersweet chocolate
* 2 1/4 cups buttermilk
* 3 1/2 cups flour
* 2 3/4 cups sugar
* 2 1/2 tsp baking powder
* 1 1/4 tsp baking soda
* 3/4 tsp salt
* 11 Tbs unsalted butter, at room temperature
* 5 large eggs
* 2 tsp vanilla extract
Cream
* 1 cup cream
* 3 Tbs sugar
* 1 Tbs vanilla extract
Instructions
Preheat oven to 325 ° degrees. Butter the Kaiser Bakeware bundform.
Cake: In a saucepan, heat 1 cup of the buttermilk, chocolate candies and bittersweet chocolate until the chocolate melts; stir into remaining buttermilk. Combine the dry ingredients in a large bowl. Add the butter and beat until combined. Mix in chocolate-mint milk; beat 2 minutes. Add eggs and vanilla extract and beat 2 minutes longer.
Pour batter into prepared pan; tap pan on counter to break up any air bubbles. Bake for 65- 80 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 20 minutes and then remove to finish cooling on a wire rack.
Cream: Beat together the cream, sugar, and vanilla extract until stiff peaks form. Serve with cake.
