1 cup butter
1 cup plus 3 tsp confectioners' sugar
2 T plus 2 tsp ground espresso coffee
2 cups flour
2 ounces sweetened chocolate
30-40 coffee beans
Instructions
In a bowl cream the butter and 2 cups confectioners sugar. Mix in 2 tablespoons ground espresso. Gradually stir in flour until well blended. Cut chocolate into small pieces and stir in. Shape 1-inch balls and place onto ungreased cookie sheet, 2 inches apart. Bake in preheated 350 degrees oven for 10-15 minutes. While the cookies are baking mix the remaining confectioners sugar and ground espresso. Remove cookies onto rack. While the cookies are still warm sprinkle the mixture on top. Place 1 coffee bean in the center of each cookie. Cool. Enjoy!
